Editing Text in a Scanned Document

   trying edit scanned text in adobe acrobat standard dc. not able unless convert word file format. purpose copy , paste text out of pdf.  able on adobe acrobat pro dc program not standard. limited pro? according adobe acrobat tutorials should work both. there nothing specifies whether acrobat standard or pro, long not reader.  below screenshot showing "edit pdf" menu on right standard not showing text option. below screenshot pro appears.

is setting set in pro automatically missing in standard? looked on find differences between 2 , can't seem find can add edit menu. need able edit scanned documents without converting them word in order save time. having convert , forth time drain.
